If the whole form is optional (e.g. a user can create an account before filling that form), "Unknown" is a good default. The user never filled the form, so from the site's perspective the user's marital status is "Unknown".

It's a bloody yes-no question. If you asked any human that question I'm sure "Yes" or "No" (or "Yeah", "Nah", "Affirm", "Deny", etc.) would be the answer.
