If the whole form is optional (e.g. a user can create an account before filling that form), "Unknown" is a good default. The user never filled the form, so from the site's perspective the user's marital status is "Unknown".

Maybe your wife disappeared, and you don't know if she's still alive or not. That's the difference between being married or being a widower. But you don't know. So, select 'unknown'.

It's a bloody yes-no question. If you asked any human that question I'm sure "Yes" or "No" (or "Yeah", "Nah", "Affirm", "Deny", etc.) would be the answer.
